Open-Faced Hummus & Feta Sandwiches

Hummus, the product of smooshing chickpeas, and feta, the product of smooshing and curing cow’s, sheep’s or goat’s milk in a brine for a bunch of months – why wouldn’t they go together? Cucumber adds some fresh crunchiness, which compliments the sandwich’s softer ingredients. I often eat this for breakfast, because of the feta’s impressive protein content, as well as the fiber and Vitamin C from the bread, hummus and cucumber. Plus, it’s ready literally in minutes, and is a nice low-calorie option at any time of day.
Ingredients
Makes: 2 servings
2 slices whole wheat sourdough bread
4 tbs hummus
1 oz. crumbled feta cheese
1/4 of one English (seedless) cucumber, thinly sliced
Preparation Instructions
1. Spread hummus (any flavor) onto one side of the bread. Layer the cucumber slices on top of the hummus, covering the entire piece of bread.
2. Crumble the feta cheese atop the cucumbers. Eat it with your hands!
